Hi! I’m Nivale. Welcome to Naturalista Food!

You can read all about my health coaching and cooking credentials below. Not so long ago, I earned a BA in English from Colorado College, where I also studied Art History. Prior to starting Naturalista Food, I worked for PBS and the Food Network; in professional kitchens in NYC and London; as a cooking instructor and as a food stylist. I celebrate variety in the kitchen and enjoy teaching people to cook creatively and eat intuitively.

You can find me outdoors with my family gardening, hiking, camping, skiing - you name it. A description of me wouldn’t be complete without admitting that I love to travel and am always dreaming up our next adventure.

Credentials

I am a certified Health Coach from the Institute for Integrative Nutrition, where I learned innovative coaching methods, practical lifestyle management techniques, and over 100 dietary theories – Ayurveda, gluten-free, Paleo, raw, vegan, macrobiotics, and everything in between.

I studied with the world's top health and wellness experts including:

  • Walter Willett, MD, DrPH, chair of nutrition at Harvard University

  • Andrew Weil, MD, director of the Arizona Center for Integrative Medicine

After completing my health coaching program, I did additional training on gut health and the microbiome, also through the Institute for Integrative Nutrition.

I have a degree in Culinary Arts from the French Culinary Institute in New York (now the International Culinary Center) and studied the Fundamentals of Indian Cuisine under best selling chef/author, Julie Sahni. I worked in a few professional kitchens: in New York for Danny Meyer and Jean Georges Vonicheron, and in London for Margot Henderson, Mark Hix, and Rosie French.
